Dave Auerbach - Creative Director
Dave Auerbach is a native New Yorker with a taste for world cuisine and a love of local artisanally made products. He holds degrees from the University of Chicago and Edinburgh University as well as a culinary certificate from the Institute of Culinary Education and is well on his way to becoming an incurable cheesaholic. Culinary specialties include northwestern French cuisine, dishes from Southeast Asia, and the tastes of northern Italy, as well as a flair for wine and cheese pairings.

Teaching and cooking have always come naturally to Dave, so a marriage of the two could never be far off. Throw those together with his former position as sous and catering chef at the City Crab and Seafood Company in New York and you have a recipe for a teaching chef with a wide background in world and fresh regional cuisine.

Rik Sansone - Wine Specialist
Rik Sansone's career in wine began in 1999 while employed as a custom hand-painted bottle artist. He then expanded his knowledge by attending every tasting he could, and pairing wines with food at home. Hired as a Sommeleir at the prestigious Russian Tea Room, Rik left after 2 days when he realized they would not allow the staff to participate in the tastings. Rik is also a Scotch and Whiskey enthusiast, and is delighted to bring all his wine & spirit knowledge to Chefs in the City.

Rik has been selling wine and conducting educational tastings for over 10 years at retail boutiques including Vintage Grape, Premier Cru and World Wines & Spirits.
